Although ramen originally came from China 350 years ago, ramen has developed and changed a lot in Japan, so Japanese ramen is now quite specifically defined as Japanese food.
In Japan ramen restaurants are everywhere, like a coffee shop, you can find it on almost every street corner.
Basically, Ramen has 5 main different flavors.
Based on chicken, pork, and vegetable stock with salt sauce. Shio means salt in Japanese. The lightest flavor than other ramen flavors.
Same above but miso in it instead of salt sauce. This has a strong and thick flavor.
Same with shio but soy sauce is used instead of salt. This is also a light flavor.
Seafood and vegetable stock with salt, miso, or soy sauce. Since the fish broth is sometimes quite strong, some people don’t like it, but it really depends on the gyokai soup whether it has a strong or light fish broth taste.
Based on pork and vegetable stock. Tonkotsu is very popular as ramen soup.
Tsuke-men is a different type of ramen in that the noodles are not in soup, but instead, you dip the noodles in a dipping sauce.
Many times, the dipping sauce is a thick gyokai (the seafood) soup.
This is a spicy type of ramen with a pork based soup. It usually has grounded meat on it.
Also, many regions have their local ramen flavors.
For example, Hokkaido, the north island in Japan, is famous for Miso, and Kyushu, the southern island is famous for Tonkotsu.
